Autumn Oat Bake
Ingredients:
1.25 cup gluten free flour
1.5 cup oats
1/2 cup sugar
1.5 tsp baking powder
1 tbsp cinnamon
1/2 cup walnuts
2 pears chopped
3/4 cup blueberries
1/2 cup pumpkin purée
1/4 cup vegan milk
1 tbsp oil
1/4 cup maple syrup
2 tbsp Cold butter
Directions:
Preheat oven 350F
Mix dry ingredients in bowl thoroughly; Leaving out 1/4 cup flour, 1/2 cup oats, 1 tbsp maple syrup and 1 tbsp cinnamon
Add fruit + nuts to mix
Stir in oil + milk + purée; set bowl aside
Make topping by combining left out dry ingredients + maple syrup + cold butter in a bowl until crumble chunks form
Spread bake in casserole dish; sprinkle topping over top
Bake 22 minutes. Let cool 15 minutes.
