Autumn Oat Bake

Ingredients:

  • 1.25 cup gluten free flour

  • 1.5 cup oats

  • 1/2 cup sugar

  • 1.5 tsp baking powder

  • 1 tbsp cinnamon

  • 1/2 cup walnuts

  • 2 pears chopped

  • 3/4 cup blueberries

  • 1/2 cup pumpkin purée

  • 1/4 cup vegan milk

  • 1 tbsp oil

  • 1/4 cup maple syrup

  • 2 tbsp Cold butter

Directions:

  1. Preheat oven 350F

  2. Mix dry ingredients in bowl thoroughly; Leaving out 1/4 cup flour, 1/2 cup oats, 1 tbsp maple syrup and 1 tbsp cinnamon

  3. Add fruit + nuts to mix

  4. Stir in oil + milk + purée; set bowl aside

  5. Make topping by combining left out dry ingredients + maple syrup + cold butter in a bowl until crumble chunks form

  6. Spread bake in casserole dish; sprinkle topping over top

  7. Bake 22 minutes. Let cool 15 minutes.
