Sweet n’Spicy Pancakes

Pancakes:

  • 1 cup GF/DF pancake mix(follow instructions for mix)

  • 1/4 cup chorizo

  • 1/4 cup chopped bell peppers

  • 2 tbsp chopped onion

  • 1 tsp olive oil

  • Spices to taste

Bacon jalapeño maple syrup:

  • 1/2 tbsp bacon drippings(save the grease from making bacon)

  • 1/2 chopped jalapeños no seeds

  • 1/2 cup maple syrup

Directions:

  1. In a sauté pan, heat 1 tsp olive oil until it coats the pan. Add onion first. Sauté until soft. Add bell pepper. Sauté until desire texture is reached.

  2. In a separate pan, cook chorizo. Drain any grease from pan.

  3. Mix veggies and chorizo in a bowl and set aside

  4. Make pancake mix according to instructions on mix.

  5. Add in the chorizo and veggies. Mix in any spices that sound good to you. I like chipotle chili powder/smoked paprika/garlic/cumin/ salt/pepper

  6. While pancakes cook, sauté jalapeños in bacon drippings until soft. In small pot, mix jalapeños and maple syrup on low heat.

  7. Pour syrup over pancakes and enjoy!
