Quinoa Salad

Ingredients:

1 cup Quinoa

1/2 cup halved grape tomatoes

1/2 cup chopped cucumber

2 tbsp chopped parsley

2 tbsp chopped cilantro

1/4 cup chopped red onion

1/3 cup halved Kalamata Olives

3 tbsp ACV

1/4 cup Olive oil

Salt Pepper Sumac Garlic Powder to taste

Directions:

  1. Rinse quinoa.

  2. Place quinoa in Instant Pot with 1 cup water. You can sub broth for water if you like more flavor. Cook quinoa on Brown Rice setting.

  3. While quinoa cooks, half the olives and tomatoes and chop onion, cucumber(Remove the center of cucumber for more crunch and less moisture during storage of leftovers), parsley and cilantro. Chop onion into fine pieces so the flavor isn’t overwhelming.

  4. In a blender combine ACV, Olive Oil, and spices. Blend into dressing.

  5. Add quinoa, veggies, and dressing in a bowl together. Serve chilled.

  6. Play with ingredients like radish, celery, carrot, roasted sweet potato and root veggies. Add spices or other vinegars to dressing. Use lemon or lime juice for acidity. This is a great base recipe with plenty of room to get creative.
