Spicy Pineapple Blueberry Oatmeal Crumble

Dry ingredients

1 cup oatmeal

1/4 cup almond meal

1 tsp of each: turmeric ginger nutmeg

1/2 tsp vanilla powder or extract

1/4 cup coconut sugar

1/2 tbsp cinnamon

Liquid ingredients

1/2 cup vanilla oat or almond milk

1 tbsp coconut oil

1/2 cup plain yogurt

Fruit

1/2 cup blueberries (fresh or frozen

8oz crushed pineapple

Topping

2 tbsp coconut sugar

1/4 cup shredded coconut

1 tsp cinnamon

1/2 tsp each ginger & nutmeg

1/2 stick cold butter cut into 4-6 pieces

Directions

Preheat oven to 350°F. Combine dry ingredients into large bowl. Add liquid. Add fruit. Mix thoroughly until thick batter forms. Pour batter into 8x8 baking pan. Hand mix topping ingredients until it makes little crumbles of mix. Sprinkle topping over the top. Bake crumble 30 minutes. Allow to cool. Scoop and enjoy!
